She mentioned her old neighborhood is ringed with mexican restaurants. I know that neighborhood and asked about the Mom and Pop italian restaurant which operates in the same locale. She told me it's well received and busy with customers. The italian restaurant in question took a risk but with big risk comes big rewards. Think about it. A glut of one type of restaurant food and you open a restaurant offering a completely different menu. I consider that a smart move and a way to stand out from the crowd. Differentiate your business from your competitors and grow. A good example? Taco Cabana. Up to their business launch, their concept of casual patio eating wasn't really done on that scale. They carved out market share and distinguished themselves from the other mexican restaurants with their business concept. Now they are in many cities and doing well.
